The Perfect Vegan Banana Bread

Vegan baking isn’t something to be intimidated by.


I think baking with restrictions like gluten-free, vegan, lactose-free, egg-free…etc. is something that intimidates a lot of people. When you think about baking vegan treats, you might think of expensive ingredients, “fake” ingredients, or using something you aren’t used to. Let me tell you- this banana bread uses all ingredients you already have in your pantry!

To top this banana bread off, I add two slices of banana, sliced lengthwise. In the oven, the banana caramelizes and creates this beautiful, natural garnish on the top of the loaf.

My favourite thing to do with banana bread is to make it into french toast. This recipe is not too sweet, and it has a touch of cinnamon that adds a really warm flavour. This, mixed with the egg custard mixture of the french toast, creates a magical breakfast anyone would enjoy. Served with some of your favourite nut butter- your Sunday brunch will be the best one yet!

Does anyone like nuts in their banana bread? I found a lot of recipes with walnuts or pecans in them, and I’m not convinced. When I think about the perfect banana bread, I think about a warm, moist and soft slice. The thought of having crunchy nuts in it just doesn’t seem right to me. If I am looking to add texture, I’ll add some crunchy peanut butter, or like I said before, make it into french toast and top it with nuts instead. However, this is only my opinion and I am sure there are many of you who will disagree with me!

This banana bread freezes really well too! Its a great treat to make ahead and keep in your freezer for a rainy day!

Anyway, here is the recipe for this DELICIOUS & PERFECT banana bread!


VEGAN Banana Bread


  • 4 medium ripe bananas
  • ¼ cup vegetable oil
  • ¼ cup of your favourite unsweetened non-dairy milk
  • ½ cup light brown sugar
  • 2 tsp pure vanilla extract
  • 2 cup unbleached all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • sliced bananas, for topping


  1. Preheat the oven to 350F. Spray a 9×5 loaf pan with nonstick spray, then flour.
  2. In a large mixing bowl, roughly mash the bananas. Add the brown sugar, oil, vanilla, and almond milk, and whisk to incorporate.
  3. Sift in the flour, baking soda, salt, and cinnamon, and use a wooden spoon to mix.
  4. Transfer the batter to your prepared pan, and top with the extra banana slices.
  5. Bake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the center comes out with just a couple crumbs.
