Fresh Box Market Collaboration- July 25th

I am so happy to share with everyone that I am collaborating with Fresh Box Market to bring you recipes using fresh produce from their weekly boxes!

All of Fresh Box Market’s produce is sourced locally or freshly imported when local is not available. They take pride in providing the freshest and highest quality product possible. Their produce comes in the same day as it goes out, within a 12 hour period to ensure the freshest and highest quality produce possible is given to each customer. Fresh Box Market’s creators, Man and Caitlyn, realized that the grocery/food/retail industry is quickly transitioning online and not everyone with a busy schedule can make it to the farmers markets to purchase fresh produce. So, they came up with a subscription and delivery service to provide farmer’s market quality produce to everyone, no matter how busy your schedule is!

The price of a box is 20$ a week, and you are provided with a big box full of fruits and vegetables. You can decide to place an order each week, you can subscribe to automatically get a box each week, OR- for a limited time they are having a 2 month special: ORDER FOR 2 MONTHS, and pay only $140. (Save $20) Each week they will post on their Facebook page a list of the produce that is in the box, with some additional add-ons or substitutions. TO order your box, send them a message on Facebook or order on their website.

Grilled Mexican Corn

I grilled the corn on the barbecue to develop some delicious char flavour. Once it was done cooking I brushed it with a garlic-y mayonnaise based sauce. I then sprinkled it with cotija cheese, smoked paprika, chili powder, cayenne, and finished it with some cilantro. It is such a delicious addition to your dinner table and really doesn’t take long at all to put together.

French-Style Potato Salad

French style potato salad uses an oil-based vinaigrette as a dressing rather than a traditional mayonnaise base. I much prefer the vinaigrette dressing. I find that it brightens up the flavour of the potatoes and the green onions, and it doesn’t make it as rich. Especially when using delicious Ontario New potatoes, you don’t want to mask the flavour of the actual potatoes, rather you want to enhance it. Again, this is another easy recipe, it uses ingredients you probably already have in your pantry and it doesn’t take long to put together!

Warm Apple and Berry Cobbler

Cobbler’s are such a perfect summer dessert. When you are looking to highlight the fruit you are baking with- which is the goal when you have such high quality, fresh produce like I have- cobbler’s do the job perfectly. The filling is gooey, sweet and delicious and doesn’t get overpowered by the dropped biscuit topping. This dessert is best served warm, right out of the oven with a scoop of vanilla ice cream right on top. YUM!
