Chai Poached Pear Chocolate Loaf

I actually made this loaf back for my mum for mother’s day. We really enjoyed it together, (she actually said it was the best chocolate cake she had ever tasted!) Now, I’m never sure if mum is just saying that because she’s my biggest fan, but I will take the compliment and run with it.

This cake really is delicious you guys. It’s gorgeous too! The chai tea perfectly adds a warmth of flavour to the pears, that pairs beautifully well with the decadent chocolate loaf. I studded this loaf with 3 poached pears, but you can easily fit a few more in there.

Now I understand that poaching pears might sound fancy, difficult, or old-school but I promise it is so easy, and really adds so much to this delicious cake. If you want to change the recipe a bit for yourself, you can poach the pears in a different flavour of team, Earl Grey for example would be delicious. OR you could poach the pears in red wine. Red wine and chocolate? We all know that’s a match made in heaven.

That being said, the spices that are in the chai tea make this cake perfect. The cinnamon, cloves, allspice, star anise… the list goes on. Chai Tea Poached Pear Chocolate Loaf

Chai Poached Pear Chocolate Loaf

Ingredients

FOR PEARS

  • 5 chai spiced tea bags
  • 4 cups boiling water
  • 1 cup granulated sugar
  • 1 vanilla bean
  • 3 medium pears, peeled

FOR LOAF

  • 1/2 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • 2 large eggs
  • 1 1/3 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/3 teaspoon salt
  • 2/3 cup whole milk
  • 1/3 cup sour cream

Process

FOR PEARS

  1. In a medium size pot, let the tea bags steep in the boiling water for 5 minutes to infuse. Remove tea bags after 5 minutes. Add the sugar to the tea and stir to dissolve.
  2. Add the peeled pears and vanilla bean to the pot and bring tea to a boil over medium heat. Let the pears simmer for 20 – 25 minutes over medium-low heat until the pears are tender.
  3. Once pears are tender, remove the pears from the pot and set aside to let cool.

FOR LOAF

  1. Preheat oven at 350°F. Grease a loaf pan and line pan with parchment with overhang on both sides.
  2. In a large bowl, whisk together cocoa powder, baking soda, and salt. Set aside.
  3. In a large measuring cup combine the milk and sour cream. Set aside.
  4. In a mixer with a paddle attachment, beat the butter and brown sugar together until light and fluffy. Add the eggs, one at a time and mix until well incorporated.
  5. Add in half of the flour mixture and half of the milk mixture and start mixing on slow. Add in the remainder of ingredients and mixed until just combined.
  6. Pour the batter into the loaf pan, then place the pears bottom side down in the batter so they are nearly enveloped. Bake for 50 – 55 minutes, then allow to sit for 20 minutes on a cooling rack before removing from pan.
