Loaded Greek Quinoa Salad

This salad is packed full of veggies and delicious flavours! Greek salad is one of my all time favourite salads, but sometimes it can get a little bit….boring. The typical Greek salad is very simple: cucumbers, tomatoes, feta and olives. Here and there you will see some other ingredients thrown in, but that is the gist of it.

I use a lot of the vegetables that I got from my FreshBox this week. All of them work so well together, expecially when you have this delicious olive dressing. I added some arugula straight from my garden- I love arugula because it has a bit of a spicy/peppery taste to it. If you aren’t a fan of arugula- you can use romaine, or any other lettuce you have on hand!

If you love Greek Salad- you will love this recipe. Feel free to add more veggies that you have in your fridge- roasted red pepper would be really nice, artichoke hearts, sundried tomatoes…the list goes on.

Loaded Greek Quinoa Salad

Ingredients

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/3 cup finely chopped kalamata olives
  • juice from half a lemon
  • pepper + crushed red pepper

For the Salad:

  • 1 cup quinoa, cooked
  • 2 cucumbers sliced
  • 1 zucchini sliced or cut into ribbons
  • 1 large handful of arugula (or any lettuce of your choice)
  • 1 cup tomatoes chopped in large chunks
  • 1 large handful fresh basil + mint
  • 4 radishes sliced
  • 1 block feta cheese crumbled
  • 1 cup plain hummus
  • 1 avocado sliced
  • toasted nuts for topping

Process

For the Dressing:

  1. Combine all ingredients in a bowl or glass jar. Season with pepper and crushed red pepper flakes. Keep any leftover dressing in the fridge.

For the Salad:

  1. Add the cooked quinoa to a large bowl. Add the cucumbers, zucchini, chopped tomatoes, basil, radishes, crumbled feta and. Gently toss to combine. Add a little of the dressing and toss once more.
  2. Spread the hummus in the bottom of a salad or serving bowl. Top with the quinoa salad and sliced avocado. Garnish with toasted nuts and mint.
