Vegan Strawberry-Peach Ice Cream

Day 4!

I don’t own an ice-cream machine, but that doesn’t stop me from making some! Whenever I’m wanting to make some ice-cream, I go for a no-churn version.

However, a no-churn ice cream usually starts with a sweetened condensed milk and heavy cream base, with your “toppings” folded in. Of course- both of these things are not vegan. Another form of no-churn ice cream also goes by the name of nice cream. It’s usually blended up frozen bananas with another kind of fruit that you want as your main flavour. I’m not actually the biggest fan of bananas and I wanted to find a way of making creamy, vegan ice cream without them.

Coconut milk/cream is a vegan baker’s best friend. It is the perfect substitute for so many ingredients. It is creamy, light, and can be manipulated in so many ways to create the perfect vegan dessert. In this vegan ice cream I blend up coconut cream, frozen strawberries and peaches with a bit of flavouring to create a perfectly smooth and delicious summer treat.

You can buy coconut cream at the grocery store, or you can make it yourself with a can of coconut milk. Coconut milk and coconut cream are not the same thing. When you open up a can of coconut milk, there is clear liquid, and a thicker white liquid. If you place your can of coconut milk in the refrigerator overnight, the coconut cream (Thicker part) and the coconut water will separate. All that you need to do is open the can upside down and drain out the liquid part in the can. The coconut cream will remain in the can. This recipe only uses the coconut cream.

You of course can make just strawberry ice cream or just peach ice cream, but I decided I wanted to make a swirl with both flavours.

It’s important to let this freeze for a good amount of time. Because this isn’t a churned ice cream, the base needs ample time to freeze all the way through. It takes a long time to fully harden enough to be able to make nice scoops of ice cream so be sure to leave it overnight.

Vegan Strawberry Peach Ice Cream

Ingredients

For Strawberry Swirl:

  • 2 cups frozen strawberries
  • 2 tBsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup coconut cream

For Peach Swirl:

  • 2 cups frozen peaches
  • 2 tBsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup coconut cream

Process

  1. For each ice-cream base, place all ingredients into a food processor and blend until smooth.
  2. Place dollops of each flavour into a plastic wrap lined loaf pan.
  3. Swirl flavours together with a knife to create a swirl pattern.
  4. Cover with plastic wrap and freeze overnight.
  5. Enjoy!
