Hi everyone! This week’s box brought me three of my favourite recipes so far! I am so excited to share them all with you!
Make sure to check out Fresh Box on Facebook, their website:
and on their instagram. They are constantly posting updates on different produce, baked goods, and other fun things they bring to us each week! They are also expanding their delivery range so look out to see if your town is added to their list next!
FreshBox Market is at the Fergus Scottish festival this weekend- be sure to go check them out- they will be selling some delicious goodies.
Because I don’t use all of the produce in my fresh box, I want to give you some more inspiration on what you could make with the produce I do not use in my recipes.
Here are a few links to some recipes using the beautiful fresh produce left over in your box:
Roasted Cauliflower – from Carls Bad Cravings
Broccoli Fritters– from Healthier Steps
Lemon-Parmesan Green and Yellow Beans – from Grateful
Here is this week’s post:
This week’s box:
This week I have made a couple dishes using the produce from my box. I made:

This delicious salsa is great on anything or even on its own. You can eat it with tortilla chips, on fresh grilled fish, chicken, tacos… you name it. The freshness of the ingredients screams summer and I am so excited for you all to try it out!
This is a really fun twist on the classic Caprese salad. I substitute peaches for the tomatoes, add a bit of salty prosciutto and drizzle some balsamic reduction- it’s the perfect summer salad. All of the flavours come together to create a beautifully balanced bite that any of your guests will love!
This is also a fun twist on the original coffee cake (I guess the theme of this week is twists on classic recipes). The tartness of the golden plums pairs really well with the spice from the cinnamon, and the sweetness of the cake. You can make this as one cake, or as individual coffee cake muffins.
