Fresh Box Market Collaboration – August 8th

Hi everyone! This week’s box brought me three of my favourite recipes so far! I am so excited to share them all with you!

Because I don’t use all of the produce in my fresh box, I want to give you some more inspiration on what you could make with the produce I do not use in my recipes.

Sweet Corn Salsa

This delicious salsa is great on anything or even on its own. You can eat it with tortilla chips, on fresh grilled fish, chicken, tacos… you name it. The freshness of the ingredients screams summer and I am so excited for you all to try it out!

Peach Caprese Salad w/ Prosciutto

This is a really fun twist on the classic Caprese salad. I substitute peaches for the tomatoes, add a bit of salty prosciutto and drizzle some balsamic reduction- it’s the perfect summer salad. All of the flavours come together to create a beautifully balanced bite that any of your guests will love!

Golden Plum Coffee Cake

This is also a fun twist on the original coffee cake (I guess the theme of this week is twists on classic recipes). The tartness of the golden plums pairs really well with the spice from the cinnamon, and the sweetness of the cake. You can make this as one cake, or as individual coffee cake muffins.
